  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 cup brown rice
  • 1 avocado
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil

Instructions

  1. Prepare the Tofu: Combine cornstarch, flour, garlic powder, salt, and pepper in a bowl. Toss in cubed tofu until coated.
  2. Cook the Tofu: Heat oil in a skillet over medium-high heat. Cook tofu until golden brown and crispy on all sides.
  3. Make the Teriyaki Sauce: Whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil in a small bowl.
  4. Cook the Rice: Boil vegetable broth in a pot, add brown rice and salt, cover and simmer for 15-20 minutes until tender.
  5. Assemble Your Stack: Layer cooked brown rice at the bottom of bowls or plates, top with slices of avocado and crispy tofu cubes, then drizzle with teriyaki sauce.
