  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil salted water in a pot; add carrots and cook for 10–12 minutes until fork-tender.
  3. Drain carrots and let cool slightly. Smash each carrot round using the bottom of a glass.
  4. Drizzle with olive oil, sprinkle garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese evenly.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown.
  6. Garnish with fresh parsley before serving hot.
