  • 2 sheets of puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped out) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and prick with a fork. Bake for 35-45 minutes until golden and crisp. Cool completely.
  2. Trim edges of pastry to fit an 8×8-inch pan.
  3. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix until smooth.
  4. Warm milk in another saucepan until steaming but not boiling.
  5. Gradually add warm milk to the egg mixture while whisking constantly (tempering). Return mixture to saucepan.
  6. Cook over medium heat, whisking constantly until thickened. Remove from heat and stir in vanilla seeds and butter.
  7. Line the pan with foil, place one pastry layer at the bottom, pour custard on top, cover with the second pastry layer, press down gently, and refrigerate for at least four hours or overnight.
  8. Slice into squares before serving and dust with powdered sugar.
