  • 1 tablespoon olive oil
  • 1 large sweet potato, peeled and cubed
  • 5 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 8 oz tortellini (cheese variety)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 4 tablespoons fresh thyme
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 6 cups water

Instructions

  1. In a large pot, heat olive oil over medium heat and add crumbled chicken or turkey sausage. Cook until browned, then drain any excess fat.
  2. Stir in cubed sweet potatoes, minced garlic, red pepper flakes, and tomato paste; sauté until fragrant.
  3. Pour in 6 cups of water and bring to a boil while stirring.
  4. Reduce heat to simmer, cover, and cook for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini and cover again; cook according to package instructions (about 10 minutes).
  6. Stir in fresh spinach until wilted and remove from heat.
  7. Pour in heavy cream and season to taste with salt and red pepper flakes.
