  • ½ cup granulated sugar (for the crust)
  • ¾ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the crumb mixture into a parchment-lined baking dish.
  4. In another bowl, beat cream cheese until smooth. Gradually add sugar and eggs one at a time. Mix in lemon zest, lemon juice, and vanilla until creamy.
  5. Pour the filling over the pressed crust and sprinkle the remaining crumb mixture on top.
  6. Bake for 30–35 minutes until slightly jiggly in the center.
  7. Cool at room temperature for an hour before refrigerating for at least three hours.
  8. Slice into squares and serve with optional powdered sugar or berries.
