  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup vanilla extract (alcohol-free)
  • 24 ladyfingers
  • Cinnamon for dusting

Instructions

  1. In a large bowl, whisk together egg yolks and powdered sugar until pale yellow.
  2. Combine mascarpone, coconut cream, and half of the coconut milk into the egg mixture; mix until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form; gently fold into the egg mixture.
  4. Chill the cream mixture in the fridge while preparing ladyfingers.
  5. Mix sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon in a separate bowl.
  6. Lightly dip each ladyfinger in the coquito mixture and line them at the bottom of your pan.
  7. Pour half of the chilled cream over soaked ladyfingers; sprinkle with coconut flakes.
  8. Repeat layering with remaining ingredients, finishing with more coconut flakes on top.
  9. Dust with cinnamon and chill for at least 12 hours before serving.
