  • 1 onion (diced)
  • 1 tablespoon fresh ginger (minced)
  • 4 garlic cloves (minced)
  • 1 red chili (minced)
  • 2 cans (14 ounces each) coconut milk
  • 23 tablespoons soy sauce
  • 3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • Salt and pepper, to taste
  • 1.5 lbs chicken breast (sliced)
  • Fresh cilantro, lime, chili oil, and scallions for serving

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Sauté diced onion for about 4-5 minutes until softened.
  2. Add ginger, garlic, and red chili; cook for another 2 minutes until fragrant.
  3. Pour in coconut milk, soy sauce, brown sugar, salt, pepper, and red curry paste. Stir well.
  4. Add sliced chicken into the simmering mixture and reduce heat to medium-low. Simmer for 15-20 minutes until chicken is cooked through.
  5. Serve over steamed rice and garnish with fresh lime juice, cilantro, chili oil, and scallions.
