  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed (divided)
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half (or whole milk)
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a 9×13 inch baking dish.
  2. In another bowl, beat cream cheese and powdered sugar until smooth. Stir in coconut extract and fold in half of the Cool Whip. Spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened; pour over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with toasted coconut.
  5. Cover and refrigerate for at least six hours or overnight before serving.
