  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until fluffy.
  4. Mix in eggs one at a time, followed by vanilla and coconut extracts.
  5. Alternate adding dry ingredients and coconut milk to the batter.
  6. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  7. Let cakes cool completely before removing from pans.
  8. For frosting, beat cream cheese and powdered sugar until smooth; fold in whipped heavy cream.
  9. Layer cakes with frosting in between and cover top and sides; press shredded coconut onto frosting.
  10. Chill the frosted cake in the fridge for one hour before serving.
