  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Whisk together lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, salt, and pepper in a bowl.
  2. Marinate the flank steak in the mixture for at least 30 minutes (up to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a small saucepan.
  5. Prepare corn by boiling or sautéing until tender.
  6. Preheat grill or grill pan over medium-high heat and grill the steak for about 4-5 minutes per side until medium-rare.
  7. Allow steak to rest for 5 minutes before slicing against the grain.
