  • 1 1/2 cups semi-sweet chocolate chips
  • 2 cups vegan marshmallow crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, cream together unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. Fold in chocolate chips and press the dough evenly into the prepared dish.
  6. Bake for 20-25 minutes until golden brown around the edges; let cool completely.
  7. Spread vegan marshmallow crème over the cooled cookie base.
  8. Melt semi-sweet chocolate chips with coconut oil; pour over marshmallow layer and spread evenly.
