  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 large egg yolks
  • 2 cups heavy cream (divided)
  • 3.5 oz dark chocolate (chopped)
  • 4.5 oz white chocolate (chopped)
  • 5 oz milk chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (180°C). In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, sour cream, oil, and vanilla until smooth. Mix both batters and add hot water until combined.
  2. Divide the batter into two lined cake pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely.
  3. For the mousse, warm heavy cream with vanilla in a saucepan. Whisk egg yolks with sugar and cornstarch; gradually add the hot cream while whisking continuously. Return to heat until thickened.
  4. Divide custard into two bowls; stir in melted dark chocolate in one and white chocolate in the other. Whip remaining cream into stiff peaks and fold into each mixture.
  5. Assemble the cake by layering chocolate cake with dark mousse and then white mousse. Refrigerate before adding another layer of cake on top.
  6. For ganache, heat cream until steaming; pour over chopped milk chocolate and stir until smooth. Let cool slightly before pouring over the assembled cake.
