  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups brewed espresso (cooled)
  • ½ cup fresh cherries (pitted and halved)
  • 1 package ladyfinger cookies
  • 1 ½ cups cherry preserves
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. In a shallow dish, combine the cooled espresso with almond extract (if omitting liqueur).
  3. Dip ladyfingers quickly into the espresso mixture and line them at the bottom of a 9×9-inch dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry preserves and fresh cherry halves.
  5. Repeat layering with remaining ingredients.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. Just before serving, dust with cocoa powder and garnish with extra cherries if desired.
