  • 2 TBSP all-purpose flour
  • 1 cup milk (whole or 2%)
  • ¼ tsp ground cayenne pepper
  • ¼ tsp garlic powder
  • 5.5 ounces freshly grated medium cheddar cheese
  • 2 cups finely chopped broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C). Scrub russet potatoes, poke holes in them, drizzle with olive oil, and sprinkle with salt. Bake directly on the rack for about 50 minutes until tender.
  2. For the sauce, melt butter in a saucepan over medium heat. Whisk in flour to create a roux; cook for about 1 minute. Gradually stir in milk until smooth and slightly thickened.
  3. Add cayenne pepper, garlic powder, and salt to taste. Stir in grated cheddar until melted and creamy, then mix in chopped broccoli and simmer for about 5 minutes.
