  • 4 large eggs
  • 3 cups cold cooked rice
  • 1 medium white onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas and carrots
  • ½ cup frozen corn
  • 3 tablespoons soy sauce
  • 2 teaspoons toasted sesame oil
  • Chicken or plant-based bacon (as an alternative)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then set aside.
  2. Scramble the eggs in the remaining fat, then remove from the skillet.
