  • ¾ cup peach preserves
  • ¼ cup apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon filets (about pounds)
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches (pitted and thinly sliced)
  • parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, apple cider vinegar, olive oil, soy sauce, Dijon mustard, garlic, salt, black pepper, and red pepper flakes to create the marinade. Reserve half.
  2. Marinate salmon in the remaining mixture for at least 30 minutes.
  3. Preheat the oven to 375°F.
  4. In an oven-safe skillet, heat olive oil over medium-high heat. Sear salmon fillets skin-side up until golden brown (2-3 minutes).
  5. Flip fillets skin-side down and add sliced peaches around them.
  6. Pour reserved marinade over salmon and peaches.
  7. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F.
  8. Serve garnished with parsley.
