  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 4 packages (8 ounces each) cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies
  • Optional topping: whipped cream

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. Beat softened cream cheese until smooth; gradually add sugar, then sour cream and vanilla extract. Mix well.
  4. Add eggs one at a time, mixing until incorporated.
  5. Fold in half of the rainbow jimmies and pour filling over the crust.
  6. Bake for about 60 minutes until set but slightly jiggly in the center.
  7. Let cool completely before refrigerating for at least four hours or overnight. Top with whipped cream and remaining jimmies before serving.
