  • ⅔ cup vegetable oil
  • 1/3 cup buttermilk – mix 1/3 cup whole milk + 1 tsp vinegar
  • 1 cup sour cream
  • 3/4 cup cocoa powder
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate (for frosting)
  • 3 tbsp corn syrup
  • 8 oz cream cheese
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round 9-inch cake pans and line with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, granulated sugar, brown sugar, cocoa powder, and salt.
  3. In another bowl, beat eggs with vegetable oil, buttermilk mixture, sour cream, and instant coffee until smooth.
  4. Gradually combine wet and dry ingredients; stir in boiling water until just mixed.
  5. Divide batter between pans and bake for about 30 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  6. For frosting, melt dark chocolate with corn syrup; mix into whipped cream cheese along with cocoa powder and powdered sugar until fluffy.
  7. Once cakes are cool, layer and frost as desired.
