  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices cooked chicken or turkey bacon, crumbled
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine cream cheese, cheddar cheese, crumbled chicken or turkey bacon, jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Place an eggroll wrapper on a clean surface. Add about 2 tablespoons of the mixture diagonally across the center. Fold the bottom corner over the filling and tuck in the sides before rolling tightly. Use water to seal the edges.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry eggrolls seam-side down in batches until golden brown and crispy—about 3-4 minutes each.
  4. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
