  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and grease a 9" square baking dish.
  2. In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Measure out ¾ cup once cooled.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt until smooth.
  4. Slowly whisk in the reduced apple cider.
  5. Gently fold in flour until just combined; avoid overmixing.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
  7. Cool for about 5 minutes before topping with melted butter and a cinnamon-sugar mixture.
  8. Remove from pan using parchment paper handles and let cool completely before slicing.
